About a year ago, I bought an Instant Pot on the recommendation of a friend. I wasn’t even totally sure what it was when I bought it, but it’s been worth it for brown rice alone!
I don’t know about you, but I used to dread making brown rice even though I love the way it tastes. First, it takes about 50 minutes when making it on the stovetop, and half the time, I’d forget about it, use the wrong lid or pan size and it would end up either burnt to a crisp or still floating in water.
Sigh! I mean, it’s just rice—why was it SO HARD!?
Then, enter the Instant Pot and all my brown rice woes have completely disappeared! It’s the simplest thing and the rice comes out perfectly every. single. time.
Perfect Instant Pot Brown Rice Recipe
- 1 cup brown rice
- 1 1/4 cups water
- pinch of salt
Put all ingredients in your Instant Pot and seal the lid and vent. Hit the ‘Manual’ button and add 22 minutes. Leave it and it will start after a few minutes. It takes several minutes for the Instant Pot to come up to pressure, and then the timer will start.
Once 22 minutes is up, open the vent—I use a fork to push the vent open because the steam is incredibly HOT!). Let it sit for another 10 minutes (this is called manual release).
Remove top and fluff with a fork.
Note: If you make a big batch and don’t use it all, brown rice freezes well and is great to have on hand in a pinch. Mix with some black beans, veggies, salsa and avocado and you’ve got yourself a really delicious and healthy rice bowl! And, totally #vegetarian or #vegan depending on what you add to it.
I’ve also found other great uses for the Instant Pot—bolognese, bone broth, slow cooking and so much more. If it’s been something you’ve been toying with, I highly recommend it!
